Black Label Hamish Shiraz 2021

After bushfires destroyed the chance of any wines in 2020, for some of you it has been a painful waiting period but finally that wait is over. The 2021 Hamish has arrived.

This is a truly superb representation of viticulture and winemaking in the Hunter Valley. Dark mulberries are supported by deep savoury notes of caramelised balsamic, graphite and the earthy petrichor of wet forest.

The palate length is surreal with crunchy, underripe cherry opening up to red fruits and a generous kick of tannins on the finish. The mouthfeel is seamless from front to back and shows classy elegance with its medium weight and spicy french oak on the finish.

The wine will reward you now but will give you a fantastically different drinking experience with some considerable time in the cellar. Drinking well into 2031.

A wine of this calibre deserves some preparation in the kitchen. Plan ahead with a rotisserie Porchetta over coals, pan roasted whole red onions and dutch carrots to pair.

Carefully selecting a combination of new and old French puncheons from amongst our chardonnay barrels, we strive to produce a wine of depth, structure and outstanding flavour for our limited release Cellarhands Chardonnay

An alluring nose, complexed by wild fermentation characters, shows a wine that is more savoury in character than fruit driven. Oats & meal present upfront with a flinty “struck match” and a creamy richness supporting the alluring aromas of Persian fairy floss and rich nougat.

The palate is not for the feint hearted and is seriously full bodied. Succulent, velvety and showing great structure and balance this wine speaks to your palate long after it has physically disappeared. Very subtle flavours of caramelised apple show though on the finish leaving you with a kiss of fruit falvour.

This wine drinks superbly and should be enjoyed in its unadulterated glory. Pair with a 36-month aged French Comte cheese and a handful of walnuts

Based on wines from the region of Provence in the South of France, we have created the perfect Rosé to enjoy on a beautiful sunny day. A radiant rose gold that captures the sun as it sparkles in your glass.

It is all about the red fruits with our 2022 Rosé. Strawberries, raspberry lollies and hints of dragonfruit can be enjoyed on the nose. While the soft and extremely approachable palate shows generous mouthfeel and sensual phenolics that grip the palate and cry out for some food. Super dry and crisp on the finish with just a hint of citrus, the wine is well balanced and perfect to share with friends and family alike. Enjoy this wine in it's youth and be ready for the next release in 2023!

Marry up this Rosé and a light, fresh prawn and mango salad with a dressing of lime zest, coriander, chilli and olive oil to see sparks fly.

White Label Chardonnay Hunter Valley 2022

Our White Label Chardonnay is very much in the style of Chablis where we keep the oak on the down low and let the fruit and texture of the wine shine through.

The fragrances that decant from the glass are incredibly intense. Fruit aromatics of tinned peaches and honeydew melon are fresh, clean and competing with marked floral blossoms and hints of spicy cinnamon quill.

The sensory adventure continues in the mouth. The soft and silky palate is light and refreshing with melon fruits, golden delicious apple and orange pith flavours fighting for your attention. There is also a creamy mid-palate that comes from ageing on yeast lees for the past six months.

Drinking really well in its youth and that was the idea. Enjoy now and until 2024.

In writing these notes Georgia (Assistant Winemaker) took it upon herself to take one for the team and enjoyed a bottle at home.  In the kitchen, she crafted a superb match of burnt butter and home grown sage with spinach and ricotta hand rolled tortellini. Call the winery for the recipe.

White Label Sangiovese Hilltops 2021

Chianti by another name, when in Italy, and an increasingly popular wine style on the Australian winescape. After only 9 months in oak our Sangiovese has retained that vibrant bright cherry red colour of youth.
Aromas of fresh cherries on the nose are bolstered by earthy umami aromas and a shadow of earthy beetroot relish. There is a depth of aroma here that is beguiling. The palate shows medium weight with a viscosity that allows it to flow gracefully around your mouth. Dusty tannins and pure red fruits of cherry and red plums make this a delight. Best served around 16oC – 18oC to see this wine at its best. Drinking well over the next 5-7 years.
Cured meats like Prosciutto di Parma or San Daniele bring a balance of saltiness, sweetness, and fat – ideal for such a wine. A well-balanced duck or venison ragu would also be a great match.
