2019 marks the three-peat of vintages in the Hunter Valley and what a fantastic year it was. Pale golden straw in colour and with aromas of fresh cut hay, cumquat and honeydew there is a beautiful freshness to the wine. Hints of pink musk and vanillan oak add to the complexity and with time in the glass the wine really begins to shine.

Flavours of blood orange citrus and white nectarine are ably supported by fine phenolics giving texture to the wine with a wet river stone minerality on the finish. Don’t be afraid to decant but drink now – 2027.

For wine of this style enjoy with King George Whiting with a blood orange, rocket and pomegranate salad.

Regional Series Nebbiolo Hilltops 2021

Nebbiolo is a thick-skinned grape variety and while the colour in the glass is a bright cherry red, it is translucent. However, lurking in these thick skins are tannins and these give the wine its fantastic structure.

The wine is light to medium bodied on the palate with sweet fruits of cherries and blueberries backed up by firm tannins. Combine this with a crunchy acidity giving the wine length and you have a wine screaming out for a protein laden dish to suit.

Fantastic to drink as a young wine so enjoy over the next 2-3 years but it will last a few more than that.

Protein doesn’t always have to be a cut of meat. Grab a timber board, add rich pork sausage, creamy prosciutto, fresh burrata, a slice of pecorino, a few chestnuts and a handful of olives. Buon Appetito.

Grown on the property at Glandore, this is one of our most exciting new wines. The aromatics and the profile of the fruit flavours this variety has allows us to play with the sweetness level and produce an off dry wine that is dangerously delicious.

Showing classic Gewurztraminer characters of pink musk, lychee and aromatic fresh florals our 2022 is incredibly pretty.

Soft and generous up front, the sweetness caresses the palate before the crisp acidity manoeuvres the wine towards the back palate. Lychees and candied orange fruits lift from the wine and the farewell is clean and refreshing with just a tail of sweetness saying goodbye. Drinking perfectly in its youth. Now - 2 years.

Nick, our winemaker, travelled through Laos many moons ago and one of his favourite dishes was a chicken larb salad. Mince chicken is mixed with fresh mint, red onion, chilli, lime and coriander. There is a lot of chilli in the traditional recipe but spice it up how you like. The perfect match to the sweetness this wine holds.

Black Label Hamish Shiraz Magnum 2016

Showing spades of colour, this looks to be another cracking Hamish in a long line of Cellarhand favourites.
Time in oak gives this wine a savoury complexity on the nose. Dusty oak of fresh cut and charry woodfired timbers are the first to greet the nose. Slowly, but satisfyingly, the clean red fruits start to show up and intensify.
The palate is full bodied with mouth filling fruit intensity. The creamy oak and lavish tannins give amazing structure to the wine and a long and enduring finish to the palate. As always with Hamish, the 2016 has great cellaring potential but we think closer to 10 years than 15.
The eye of the fillet holds the greatest intensity of flavour and texture so that is our pairing. Cook it your way but medium rare is our suggestion.

White Label Fiano Hunter Valley 2022

Fiano is a fantastic wine variety for the Australian climate. Originating in the South of Italy, the grape is accustomed to the warm growing conditions we have here.

Our 2022 Fiano is incredibly aromatic with lavish tropical fruit aroma's. Banana, pineapple and melon fruits are generous and prevail over the hint of freshly cut grass that sits underneath.

The wine is luxurious through the mid-palate while the crisp acidity provides a bridge linking the front to the back palate making the wine seamless and delectable. Again the tropical fruits shine through with just a touch of delicate pear skin.  25% of the fruit was left in contact with the skins for 72 hours prior to pressing adding a mouth watering texture to the finish of the wine. Drinking now - 3 years.

A wine that would be well paired with Soba noodles, a delicate Japanese dressing and BBQ salmon. Finish with almond and soy dress Asian greens.
