Black Label Chloe Blanc de Blancs RD 2019

Our first ever Estate grown Blanc de Blancs was a stunning release and being named for Nick’s beautiful wife Chloe, the wine was one of the best....and it has just gotten better!

The Chloe R.D. (Recently Disgorged) experienced an extra 12 months on yeast lees, in bottle, gaining richness and complexity. Whilst still maintaining those classic Blanc de Blancs characteristics of green apple freshness, the wine is now complexed by baked brioche and yeast autolysis characters giving intrigue to the nose.

Having now spent 24 months on yeast lees the palate shows a delicately fine mouse, creamy, fresh-bread characters fresh from the oven and complex aldehyde leading to a crisp acidity on the finish. This is an outstanding wine made using extensive méthode champenoise techniques as perfected in France. Enjoy Chloe today now and over the next several years.

Our serving suggestion stays the same. Serve with a grilled crayfish tail and a delicate champagne (sparkling) sauce.

The wine is beautifully aromatic and packed with red summer fruits of strawberries and raspberries. There is a floral rose water character on the nose that reminds us of indulgent Turkish Delight and finishes with a sherbety hint waving farewell.
The palate takes us to the south of France where dry, crisp Rosé’s are the order of the day. The wine has a fantastic balance, and those summer fruits dominate the medium bodied palate. There is a light dusting of phenolics that give texture to the wine and a kiss of acidity on the finish cleans up the palate and leaves you salivating for more.
Pair with a shared board of cheese, antipasto, cured meats and savoury nuts.

Regional Series Pinot Grigo Tumbarumba 2021

As a style, Pinot Grigio is usually quite subdued on the nose, however ours looks a bit more like the aromatic Pinot Gris style. A cooler than normal summer has probably led to this aromatic profile.

Intense white jasmine florals really do leap from the glass to greet the nose, while being further enhanced by notes of fresh grass and cumquat. The wine simply draws you in. The palate is soft, generous & with a citrusy finish giving a great length. Best enjoyed in its youth. Drink now until 2025.

A fantastic wine with seafood. Enjoy with battered, deep fried, crunchy, salt & pepper squid, drizzled with fresh lemon and a bright, sun shiny day.
